225, self-raising flour
pinch of salt
100g soft margarine
75g mixed dried fruit
50g caster sugar
1 egg
milk
- Preheat the oven to 200C and grease the baking trays. (or use silicone sheets)
- Mix the flour and salt and run in the margerine. (I cheat and use the food processor)
- Stir in the dried fruit and sugar.
- Mix to a stiff dough with the egg and milk. (Not too stiff if you prefer moist 'rock' cakes)
- Place in rough heaps on the baking tray and bake for 10-15 minutes.
